• 1.5 lbs large tail-on shrimp, deveined
• 2 tbsp extra virgin olive oil
• 2 cloves garlic, minced
• 3 oz Parmesan cheese, shredded
• 2 whole limes (juiced)
• 2 tbsp fresh cilantro, chopped
• Salt and ground pepper to taste

• 1 cup ketchup
• 0.13 cup prepared horseradish
• 1 tsp lime juice (1 lime)
• 1 tbsp fresh cilantro, chopped
• 2 tsp worcestershire sauce
• Salt and pepper to preference

1. To prepare the sauce, mix together all the ingredients in a mixing bowl and blend thoroughly. Set sauce in a serving bowl, cover with plastic wrap and place in refrigerator.
2. Set the Primo BBQ for indirect cooking and warm to 400°F.
3. In a big bowl, place the olive oil, garlic, parmesan cheese and lime juice. Add salt and pepper to taste. Next, pat the shrimp dry with a paper towel, then add the shrimp to the mixture and gently toss until they are thoroughly coated.
4. Set a single layer of shrimp on a lightly greased cookie sheet.  Place the sheet in the grill.
5. Grill the shrimp for 8-10 minutes until they become pink and firm.  Set the shrimp on a serving tray and serve warm with the chilled cocktail sauce.
